I’m going to go out on a limb here and guess that any readers I have may not be enjoying wrinkles as they begin to occur. I, myself, am personally acquainted with the onset of wrinkles…and I know how disconcerting it can be. I would like to offer a different perspective, however.

No…you worked hard…laughed hard…suffered through trials…you earned those wrinkles! Show them off…along with the other hallmarks of advanced age…your wisdom and maturity.

* 10 cups apples, peeled, cored and sliced
* 1 cup brown sugar
* 1 tablespoon flour
* 1 teaspoon ground cinnamon
* 1/2 cup water
* 1 cup old-fashioned oats
* 1 cup flour
* 1 cup brown sugar
* 1/4 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1/2 cup butter, melted
1. Preheat oven to 350 degrees.
2. Place the apples in a 9×13 inch pan. Mix the brown sugar, 1 tablespoon flour and cinnamon together and sprinkle over apples.
3. Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apples.
4. Bake at 350 for 45 minutes.
How is your basil growing? Mine is growing so well it’s time to get out the pesto ingredients. Pesto is wonderfully versatile and freezes great! If you take an herbal appetite suppressant, you might want to conveniently forget to take it so you can eat a big plate of pesto pasta.
* 2 cups fresh basil leaves, packed
* 1/2 cup freshly grated Parmesan cheese
* 1/2 cup olive oil
* 1/3 cup pine nuts
* 3 garlic cloves, minced
* Salt and pepper to taste
Combine the basil and the pine nuts and process in a food processor. Add the garlic and process more.
Slowly add the olive oil in a constant stream while the food processor is on. Add the grated cheese and blend well. Add a pinch of salt and pepper to taste.
Makes 1 cup – serve over pasta.
…to travel again. This time next week we’ll be in Tucson assuming everything goes smoothly between here and there. We have lots of those details to take care of first though. Of course, we need to make sure the car insurance is up to date, pack the kitchen sink somewhere in the van (kidding! sorta…) and try not to forget anybody. Thay alone is a huge challenge.

I’ve been watching my four-year-old son lately with fascination. He got a building kit for his fourth birthday a few months back and he just recently got it out again after temporarily forgetting about it. Now, this kit has nothing that complex or major…nothing like Ferrari parts mind you, but he is tackling it with a systematic single-mindedness that impresses me.
Watching a young mind tackle a challenge and seek to master it is extremely interesting. He gets frustrated and instead of chucking the whole thing, he sighs and actually leaves it for a few minutes and then returns to it. When he comes back he has a new idea that he tries and it often works! Amazing!
It has many different gears that can work together depending on how he constructs it on the foundation of the kit. He’s come up with some really amazing and interesting configurations.
Take a moment and watch your kids play some time without interacting with them. Just sit back and observe. You will probably be amazed as well!
Can you guess what I’m doing up? Yes…baby has insomnia, I guess. She is sitting in her bouncer at my feet staring at me. I snatched this opportunity to get a few blog posts done that have been nagging at me. I hope she’ll be patient for a few more minutes before she wants to snuggle and eat again.
I guess I could look at this quiet time she gives me each day as a personalized gift from her to me. There isn’t much to compare to the wee hours of the night. They are quiet, peaceful and like no other time of the day. She likes to be up in the middle of the night and she isn’t usually too grumpy…so I don’t mind too much.
Looks like my time runs short, so I will end for now…I didn’t say very much, now did I?
